How do you create a fabulous tasting cake?
Simple - over many years try every variation, add a bit here, use a new ingredient there, combine in a different way and let scores of people taste and taste and taste. Using this failsafe method, Diana has created all the superb recipes for her cakes.

She always uses the finest quality ingredients. If it is available, she will try to choose natural, free range and organic products, and fresh seasonal fruit where possible.


Sponges - moist and light
Lemon Pound - fluffy sponge made with gorgeous layers of real tangy lemon and smooth-as-silk lemon continental buttercream.

Apricot & Coconut - Small pieces of delicious apricot combined with the fresh taste of coconut make this mouth watering and refreshing.

Fresh cream fruit Genoese sponge - light as a feather, you can hardly feel it on your tongue as it melts away. The cake includes fresh whipped cream together with seasonal fruit, or a fruit of your choice.

Fruit cakes - sweet and succulent
Infused with cherry brandy and made with juicy fruit pieces. This rich cake is truly sumptuous.


Chocolate - seriously indulgent
Chocolate Truffle - pure dark chocolate with the nutty hint of ground almonds, surrounded by chocolate marzipan. It is gooey and gorgeous. Best with coffee to really bring out the flavours rolling around your mouth! It is also gluten and wheat free.

Chocolate Biscuit cake - pure dark chocolate fused with pieces of biscuit and freshly cut chunks of papaya, pear, pineapple, apricot and cherry. Dense and chewy - with a glorious array of different textures and flavours to savour.

Something different
Perhaps you want a cake that is, for example, gluten free, wheat free or dairy free, or you have a specific requirement? No problem, a cake can be made to meet your needs.

Diana is happy to accommodate you if you would like her to make a different cake to this selection. However, be warned - once you sample one of the above you are very likely to change your mind and opt for one of her specialities!
