3 tier tradition tiered cake with fresh
flowers
The bride wanted something traditional simple and elegant. The drapes
and bows took 2 working days and each piece was cut out by hand
and gathered to form the drape. The bows were also done the same
way.

Miniature 3D model of castle
Originally, the customers wanted a base relief of Castle Stuart
but I thought this three dimensional model was more impressive.
The walls of the building were cut out in
pastillage sugar and left to dry before assembling with royal icing.
The miniature was only five inches wide.
The sugar foliage and flowers took three
weeks to make and two days to wire into position so that it looked
as if it was tumbling down from the castle.
The most difficult part was constructing
the crown and then putting it on straight.
