Oil rig - This was a commissioned by
Cromarty Firth Port Authority for the opening of a new Wet Dock.
Her Majesty unveiled a plaque naming the
new facility “Queen’s Dock”. Afterwards the Royal Couple visited
the Royal British Legion where the Queen cut the oil rig cake.

Highland Regional Council cake - The
hexagonal cake represented the new building that housed the Council
Chambers. The panels round the sides, depicted Highland scenery.
The top of the cake was graced with the Council
Coat of Arms surrounded by a Celtic Knot design. This cake was executed
in royal icing and took one month to complete.

Total Oil Company - A celebration cake
using the company logo as the main feature. The collar work around
the cake was used to create an illusion of grandeur. |

Highland and Islands Enterprise building
- This cake was commissioned prior to the moving of the organisation
to a new building. The decorating of the cake took 18 days (9a.m.
– 10.30 p.m.). The baking, planning, photography took a week
