Scotland is a very popular destination for weddings especially for those who want a to get married in a Scottish castle. I have been commissioned to create castles, churches and even Local Government buildings. But castles are my favourite.

St. Macher’s Cathedral - This involved a round trip of 200 miles for a site visit, planning, drawing, scaling and making a model before baking the cake. This is a 3 tier stacked fruit cake and was royal iced to get the clean lines for the building.

The wrought iron work found around the church was incorporated into the filigree collar work. The difficult part was putting the crosses on the cake – they had to be straight. Then there was the 200 mile return journey to Aberdeen with the cake!!!



Castle Stuart - This model was 18 inches in diameter and took me three months to make. It is an exhibition piece and I wanted to exercise my royal icing skills as well as my flower making skills. The sugar lithianthus were life size.

In order to find enough time in the day I started work at 5:a.m.!! There was then a round trip of 800 miles to deliver it. I don’t recommend this to anyone.
